A cutting 55


A carefully laid out selection
of steel instruments spread before him.
His eyes were wild with intensity,
his focus sharp.
His victim lay helpless, motionless.
With a blind fervor,
he plunged his knife into the breast.
Cleanly dissecting flesh like some mad scientist.
Never again would he pay such high prices for boneless chicken breasts.

This was a sharp 55!

Everybody should know how to do a bit of butchering. (It's an absolute must for hunting and fishing)

I buy pork loins instead of pork chops, whole chickens and turkeys instead of wings and breasts, and entire rib roasts or whole flanks instead of single steaks.

It's rare that I pay extra for my meat just because somebody else used a knife (or a bandsaw!) instead of me.
